The Azul group is at it again. The team behind perennial Shanghai favourites – like Latin restaurant Azul, Peruvian spot Colca and Italian eatery Azul Italiano – has opened a brand new concept, Xouk. The menu, masterminded by Chef Eduardo Vargas, is aimed at offering something for all generations. Inspiration skips around Asia culinary hot spots with dishes like the Singapore Seafood Stew that blends the flavours of laksa with mixed seafood or the Crispy Soft-Shelled Crab that sits atop kimchi fried rice, an onsen egg and pickled vegetables. There are twists on Western classics such as a lamb chilli-based Shepard’s Pie and a pomegranate-glazed roast Charcoal Baby Chicken.
